cans light coconut milk

key lime juice
or lime juice *see notes above

cane sugar

tablespoon
key lime or lime zest
plus more for garnishing
shredded coconut
optional but recommended for garnishing
Instructions
Combine coconut milk, lime juice, zest and sugar in a blender
Pour into popsicle molds with sticks in place.
Freeze for at least 12 hours or overnight.
Carefully remove from molds and garnish with additional zest and coconut.
Notes
This recipe fills about 10 popsicle molds.
