Chilled Cucumber Yogurt Soup

A no cook chilled soup made with cucumbers, Greek yogurt, thick slices of avocado and topped with fresh chives. Takes just 10 minutes to prep. Requires 2 hours chill time in the fridge.

Ingredients
  

  • 2 cucumbers large, peeled and quartered
  • 1 cup Greek yogurt non fat, plain
  • 1 shallot small
  • ½ serrano pepper seeded (use even smaller amount if you don't want too much of a kick)
  • For topping:
  • 1 avocado
  • 1 cup fresh corn shucked and kernels sliced off the cob
  • ½ teaspoon salt coarse
  • small pinch of pepper
  • fresh chives chopped
  • 1 tablespoon extra virgin olive oil

Instructions
 

  • Place cucumbers, shallot, serrano pepper, yogurt, salt and pepper in a high powered blender.
  • Blend until smooth and frothy.
  • Refrigerate 2 hours to chill.
  • To serve top with sliced avocado, corn kernels, chives and drizzle with olive oil.
