Mango, Corn and Black Bean Salad

Ingredients
  

  • 1 can black beans rinsed and drained
  • 1 mango cut into cubes
  • 1 ear of corn shucked and sliced off the cob
  • 1 red pepper diced
  • large handful of grape or cherry tomatoes sliced and halved- I prefer colorful heirloom tomatoes
  • 1 scallion white and green parts thinly sliced
  • 1 ripe avocado pitted and cut into cubes
  • juice of 1-2 limes depending on how juicy they are
  • fresh bunch of cilantro roughly chopped
  • generous pinch of sea salt or pink himalayan salt
  • pepper

Instructions
 

  • Combine all ingredients together with the lime juice in a medium sized bowl.
  • Toss and let sit for about half hour at room temperature.
  • Add the fresh cilantro.
  • Season to taste with additional salt, pepper and/or lime juice.
  • Serve with tortilla chips or crackers.
