Coconut Key Lime Popsicles

Ingredients
  

  • 2 15 oz cans light coconut milk
  • cup key lime juice or lime juice *see notes above
  • ¼ cup cane sugar
  • 2 tablespoon key lime or lime zest plus more for garnishing
  • shredded coconut optional but recommended for garnishing

Instructions
 

  • Combine coconut milk, lime juice, zest and sugar in a blender
  • Pour into popsicle molds with sticks in place.
  • Freeze for at least 12 hours or overnight.
  • Carefully remove from molds and garnish with additional zest and coconut.

Notes

This recipe fills about 10 popsicle molds.
