    Coconut Key Lime Popsicles

    There's nothing like a frozen treat to cool you down on a hot summer day. These Coconut Key Lime Popsicles are so refreshing and do just the trick! They're so easy to make and contain only 3 ingredients! Full of tropical goodness, these popsicles are low in sugar and contain real key lime juice!

    What You Need To Make Coconut Key Lime Popsicles

    The first ingredient is coconut milk.

    You want the coconut milk that comes in a can for this recipe, not the kind you would use for say, cereal which contains too much water. I tried this recipe using full fat coconut milk. The popsicles came out pretty good but they were a little too rich for my liking. At 10 grams of saturated fat per popsicles, I thought I could definitely do a little better. I was curious how "light" coconut milk would taste in this recipe. It turns out the answer was... pretty darn good. They were certainly creamy enough to satisfy that coconut milk craving.

    Next up is key limes.

    When ripe, they're slightly sweeter than regular limes, and their aroma gives off that uniquely tropical vibe. Squeezing out the juice from a key lime can be a little daunting because they're so small, but in my opinion it's worth the effort. If you can't find key limes, regular limes will work just fine.

    *I found regular limes and the zest to be more potent in terms of flavor.

    **You will need to use the zest of the key limes for this recipe. I also sprinkle on a little zest right before serving too. It adds such a nice flavor and makes them so pretty. Keep some zest tucked away in ziplock bag until the popsicles are ready to eat.

    Lastly, sugar. 

    You will need to sweeten these babies up. It's a treat after all.

    I used a small amount of regular cane sugar, but you can sweeten to your liking.  You could also use whatever sweetener you like. I preferred to keep the popsicles white, so you may want to keep that in mind when choosing your sweetener. Maple syrup, raw, brown or coconut sugar, for example, may throw off the color, although I haven't tested this theory myself.

    Ingredients
      

    • 2 15 oz cans light coconut milk
    • ⅓ cup key lime juice or lime juice *see notes above
    • ¼ cup cane sugar
    • 2 tablespoon key lime or lime zest plus more for garnishing
    • shredded coconut optional but recommended for garnishing

    Instructions
     

    • Combine coconut milk, lime juice, zest and sugar in a blender
    • Pour into popsicle molds with sticks in place.
    • Freeze for at least 12 hours or overnight.
    • Carefully remove from molds and garnish with additional zest and coconut.

    Notes

    This recipe fills about 10 popsicle molds.
