Originally from New York, I made the small leap over to Middletown, New Jersey about 15 years ago. It's here along the Jersey Shore where I live with my husband of over 20 years, our two teenage children and two Cavalier King Charles Spaniels, all of whom literally keep me on my toes each and every day. When I'm not in the kitchen cooking, photographing and cleaning up a giant mess, you can usually find me on a walk with my dogs, practicing yoga or pilates, running my daughter to ballet classes or trying to sneak in some quiet time curled up by the fire, thumbing through pages of the hottest new cookbook or nerdy nutrition journal.
Inspiration for Spoonful of Plants
Living in a rural community, amidst farms and orchards, has been a constant source of inspiration for the meals I create. Over the years I've also become educated about the atrocities that animals are subjected to on farms and in factories. In order to align my heart with my plate, I have chosen to make most of my meals plant-based. I can only describe it as an awakening.
When we connect our spirit with nature, our health seems to naturally fall into place. That's truly what plant-based living is all about. A connective, mindful appreciation for the world around us and the food we eat.
I spent many years working in the clinical setting (hospitals, dialysis centers and doctor's offices). It wasn't until I began food blogging, that I felt I could really bring practical nutrition advice to life. Blogging became an effective way of sharing my knowledge, and the recipes that would ultimately get people into their kitchens wanting more. In the process, I've also developed a true passion for food photography that has since turned into a career.
I think one of the most effective ways to get people to eat healthier is to entice them with mouth-watering recipes, beautiful photography and the kind of meals that can get families excited about sitting down to the table together.
My hope is that this blog will be a valuable resource for you: a place where you'll learn, grow and even be inspired to grab a spoonful of plants yourself!
