Watermelon & Arugula Salad Pizza

Ingredients
  

  • 1 slice watermelon preferably from chilled watermelon *see notes above on slicing
  • 1 cup arugula
  • ¼ cup grape tomatoes recommend heirloom tomatoes if you can find them
  • ¼ cup cucumbers sliced thin and small
  • 1 tablespoon walnuts crushed
  • 1 teaspoon extra virgin olive oil
  • 1 tsp balsamic glaze
  • dash salt
  • dash pepper
  • ¼ cup crumbled feta cheese

Instructions
 

  • In the widest part of the melon, slice across to form one large round piece.
  • Place the melon on a plate.
  • In a separate bowl, toss the arugula, tomatoes and cucumber with the olive oil, salt and pepper.
  • Top the melon with the arugula salad.
  • Sprinkle on the feta and drizzle on the balsamic glaze.
  • Cut into slices and enjoy!

Notes

Nutrition information is based on using regular feta cheese (not vegan) for this recipe.
