Whipped Feta and Fig Toasts with Pistachios and Honey

Crunchy toast is topped with my healthier, creamy version of whipped feta, fresh figs and lightly drizzled with sweet honey and salty crushed pistachios.

Ingredients
  

  • 2 slices sourdough bread or favorite whole grain rustic bread
  • 4 figs fresh, sliced
  • 3 oz Valbreso Feta about (half the package)
  • 2 tablespoon non-fat plain Greek yogurt
  • 1 tablespoon crushed pistachios
  • 2 tsp honey

Instructions
 

  • Allow feta to come to room temperature.
  • Toast the bread.
  • In a medium bowl, with a fork or whisk, whip the feta with one tablespoon yogurt at a time until reaching desired whipped creamy consistency (you will likely have a little leftover whipped feta).
  • Top the bread with whipped feta, figs, and drizzle with honey.
  • Serve immediately.
