I truly didn't think, with all the hustle and bustle, that I was going to be able to fit in another post before Christmas. But, here I am!
If you're entertaining in the next few weeks, then you're probably looking for some last minute appetizer ideas to wow your guests! This Fig and Gorgonzola Crostini will certainly do the trick, and it's so quick and easy. I give you two ways to make these crostini, because I know sometimes its hard to find figs, especially this late in the season. A good quality fig spread (if you can't find figs) is an absolutely perfect substitution.
It starts with a sliced loaf of french baguette bread that is lightly toasted in the oven until golden. The bread can stay in a ziplock bag for up to 2-3 days before toasting.
Once the toast is cooled, it's as easy as slicing up the figs, spreading the cheese and drizzling on the honey. Place the assembled crostini on a wooden serving board or platter with some almonds and herbs or greens for color. Serve alongside marinated olives and a vegetable crudité and voilá...a beautiful and elegant appetizer spread! When you cook with real wholesome food, the natural beauty and simplicity of it make you wonder why you'd ever want anything else.
I hope all of you will be enjoying beautiful memories and great food with your families this holiday season! Wishing you love and peace! -Donna
