If you're looking for a fun twist on a healthy breakfast, these Fruity Lemon Poppy Seed Ricotta Toasts are it! Crispy toast is slathered with creamy ricotta, lemon zest and poppy seeds, then topped with berries and honey for a healthy and satisfying breakfast or snack. Main Ingredients
- Part skim ricotta- you can also use whole milk if you want a richer more creamy spread.
- Poppy seeds- a very underused ingredient in my opinion.
- Lemon zest- adds a bright fresh flavor than livens up the ricotta cheese.
- Fresh berries or fruit of choice - the choices are endless, but I love berries and figs.
- Honey- optional, I love just a light drizzle over top.
Nutrition Notes
- Ricotta contains less sodium and slightly more potassium and phosphorus than it's popular competitor cottage cheese. So, for that reason I usually prefer it in breakfast and snacks.
- Did you know poppy seeds are full of fiber and healthy fats, vitamins and minerals including calcium? So, don't be afraid to sprinkle them on!
- I use fresh sourdough or 100% whole grain bread when I make toasts like these, which increases the nutrient and fiber content.


Fruity Lemon Poppyseed Ricotta Toasts
Ingredients
- ½ cup part-skim ricotta cheese left out at room temp for about 10 minutes to take out the cold chill
- ¼ cup raspberries or fruit of choice
- 2 slices sourdough bread or 100% whole grain bread
- honey
- poppy seeds don't be shy
- zest of one large lemon or 2 small
Instructions
- Toast bread.
- While bread is toasting, in a small bowl combine ricotta and lemon zest.
- Top toasts with ricotta and lemon mixture, fruit and sprinkle on the poppy seeds. Drizzle on honey if desired.
