Hi everyone! I'm trying to soak up every bit of summer because it is flying by!
Somehow, in between house renovations and shuffling my daughter to NYC for her ballet training, then driving my son off to practice with his bands so they can rock some of NJ's coolest venues, I have managed to sneak in a little bit of beach time. Thank goodness! Because it's the only thing keeping me sane right now. If you think it's rough when your kids are young, just wait until they are teens. I'm running myself ragged... more than I ever did when they were little. But, I'm so happy they are passionate about what they do. It thrills me to watch them develop their talents, enjoy their art and create new friendships along the way! That's what it's all about!

Mango, Kale & Coconut Smoothie
Ingredients
- 1 & ½ cup frozen mango chunks
- 1 cup chopped kale stems removed
- ⅓ cup greek yogurt I use 2% fat
- ½ cup OJ
- 1 cup coconut water
- handful ice cubes
Instructions
- Blend all ingredients in a high powered blender.
- Serve ice cold or in chilled glasses.
