Wildflower Honey Flavor Profile
Wildflower honey has floral notes that are so perfect for summer salads. It's made from the nectar of many different types of flower blossoms. Taste will vary depending on the types of flowers and where it is harvested.
I also use champagne vinegar which has a slightly citrus aroma that's amplified even more by a few squeezes of fresh lemon juice. The combination of those three ingredients together is what makes the dressing so delicious. I bet you can already smell it through the screen!

Nutritional Benefits of Homemade Dressing
Allows you to adjust the amount of salt and sugar. Many salad dressings can contain a lot of salt and sugar. That's important especially for those with high blood pressure and/or diabetes. As a reminder, the American Heart Association recommends a dietary limit of no more that 2,300 mg/ day of sodium, and no more than 6-9 teaspoon of added sugar for women and men respectively.
Food For Thought
Even though raw wildflower honey contains antioxidants and other beneficial nutrients when compared to regular table sugar, it's still considered an "added sugar," that should be consumed within those daily limit recommendations.

- 1 Ball jar
Ingredients
- 2 teaspoon Wildflower Honey
- 1 tbsp Champagne vinegar
- 1 tbsp fresh lemon juice
- ¼ cup extra virgin olive oil
- ¼ teaspoon coarse salt
- ¼ teaspoon freshly ground pepper
Instructions
- Combine all ingredients in a small bowl or jar and whisk (or shake) to thoroughly combine.
- Adjust seasonings as needed.
